Bacon Wrapped Stuffed Pork Chops

This is an explosion of flavors! I added a bit of pesto along with shredded mozzarella and some other things. Turned out pretty Awesome!

Toothpicks will be your best friend for this recipe. No, you don't have to soak toothpicks. They are already cured which makes them so great.


Start by slicing the thick cut pork chop from the edge ALMOST in 2 pieces. Do not slice all the way through.


Apply a thin layer on the inside of the chops with basil pesto. Follow the pesto with a layer of spinach leaves then shredded mozzarella cheese. Load it up with however much will fit. Once satisfied closed the chop and secure with toothpicks.

Bacon Wrapped Stuffed Pork Chops

Ingredients

  1. 1 tablespoon Olive Oil

  2. 8 oz package Uncooked Bacon

  3. 2 cups Spinach Leaves

  4. 2 cups Shredded Mozzarella Cheese

  5. 2 tablespoons Basil Pesto

  6. 2 teaspoons Garlic Powder

  7. Salt and Pepper to Taste

Instructions

  1. Set oven on Bake at 350 degrees

  2. Coat cooking sheet with Olive Oil

  3. Pat pork chops dry with a paper towel.

  4. Season with Salt, Pepper and Garlic Powder (both sides)

  5. On the inside, apply a thin layer of Basil Pesto

  6. Add spinach leaves

  7. Top spinach with shredded mozzarella cheese

  8. Close pork chops using toothpicks. About 3 toothpicks per chop

  9. Bake for 45 minutes. I like to turn oven to broil for the last 5 minutes to make the bacon crispier.
