This sweet and tangy pulled pork recipe is my crockpot version of a Carolina classic. Top the pulled pork with some Homemade cole slaw on a brioche bun and you'll be whistlin' Dixie before you know it.
Tender, melt in your moth pulled pork will simmer in the crockpot all day. When you're ready, it comes together easily in just a few minutes. Just remove the meat from the crockpot and let it cool. Once cooled, take 2 forks (one in each hand) and shred away. Toss in your favorite BBQ sauce and enjoy.
Carolina Pulled Pork Sandwich
Ingredients - Pulled Pork
4 - 5 lb Boneless Pork Shoulder or Pork Loin
2 tablespoons Salt
2 tablespoons Pepper
3 - 4 Freshly Minced Garlic Cloves
1/4 cup Apple Cider Vinegar
1 cup BBQ Sauce
Red Pepper Flakes (Optional)
Brioche Hamburger Buns
Ingredients - Cole Slaw
1 cup Green Cabbage
1 cup Red Cabbage
2 Medium Sized Carrots (cleaned)
1 cup Mayonnaise (I prefer Duke's)
1/4 cup White Sugar
4 teaspoons White Vinegar
1/4 teaspoon Salt
Pepper to taste
Instructions - Pulled Pork
Rinse the pork and pat dry with a paper towel. Rub salt and pepper all over the pork and place in a crock pot.
In a separate bowl mix the Apple Cider Vinegar and BBQ sauce together. Toss in minced garlic cloves and mix well
Pour Step 2's concoction all over the pork in the crock pot.
Cook on Low setting for 8 - 10 hours, until the meat is very tender.
Once cooled enough to mess with take 2 forks and use them to shred the pork. This should be super easy as the meat just falls apart.
Add BBQ sauce as you like and serve on buns. Add cole slaw for more flavor and a little crunch!
Instructions - Cole Slaw
Slice the carrots, green cabbage and red cabbage very thin. You can use a grater for desired thickness.
Add vegetables, mayonnaise, white sugar, white vinegar, salt and pepper to a medium sized mixing bowl.
Fold the ingredients together. Chill in refrigerator. Serve when cooled to your liking.
Note:
To reheat after shredding, you can add the now shredded pulled pork into the crockpot for another 20 minutes after you shred it to get the temperature up before serving.
