Chili

Spice up your dinner routine with this hearty and always loved chili recipe

A Tex-Mex recipe first introduced in the early 1850's during the Mexican-American War. Chili became commonly prepared in northern Mexico and southern Texas. Unlike some other Texas foods, such as barbecued brisket, chili largely originated with working-class Tejana and Mexican women. The Chili Queens of San Antonio, Texas were particularly famous in previous decades for selling their inexpensive chili-flavored beef stew in their casual "Chili Joints".

Chili

Ingredients

  1. 2 pounds Ground Beef (Ground Round 90/10 is best)

  2. 1 cups Sliced Peppers - Red, Orange and Yellow

  3. 1/2 cup Sliced / Chopped Onion

  4. 1 cup Sliced Mushrooms

  5. 3 Cloves of Garlic, minced

  6. 2 tablespoon Cumin

  7. 2 tablespoon Chili Powder

  8. 3 tablespoon Salt

  9. 1 tablespoon Pepper

  10. 14.5 oz. can of Diced Tomatoes, with juices

  11. 15.5 oz. can of Dark Red Kidney Beans, drained

Instructions for stovetop

  1. In a large pot brown the ground beef on medium high.

  2. As the meat is starting to turn brown, mix in peppers, onion, garlic and sliced mushrooms.

  3. As the peppers, onions and garlic are cooking add your spices. Cumin, Chili Powder, Salt and Pepper. - You can also add Red Pepper Flakes if you would like more kick

  4. Add Diced Tomatoes and Red Kidney Beans.

  5. Gently mix all ingredients well. Simmer on Low for at least an hour. Stirring occasionally.

Instructions when using a crockpot

  1. In a large pot, brown the ground beef on medium high

  2. Add browned beef, peppers, onion, garlic, sliced mushrooms, cumin, chili powder, salt and pepper to the crockpot - You can also add Red Pepper Flakes if you would like more kick. Mix all together well but carefully.

  3. Add Diced Tomatoes and Red Kidney Beans.

  4. Gently mix all ingredients again. Simmer on Low for 4-6 hours. Or on High for 2-4 hours.

This can easily be made in the crockpot while you're working. Add browned meat and add the rest of the ingredients into your crockpot and set on low for 8 hours. If you want it done quicker set on high for 4 hours. If set on high for 4 hours, it will be done within 2 hours.
