Homestyle Chicken Noodle Soup in 1-Hour

A perfect homemade tasting soup made with simple store-bought ingredients and fresh vegetables. When you're pressed for time, this will definitely check all of the boxes. It's full of flavor and chock full of chunky freshly sliced vegetables.

Homestyle Chicken Noodle Soup in 1-Hour

Ingredients

  1. 1 Rotisserie Chicken

  2. 3 x 32 oz Chicken Broth

  3. 32 oz Water

  4. 4 tbsp of Salt

  5. 3 tbsp of Pepper

  6. 3 Stalks of Celery - rinsed and sliced into 1/4" pieces

  7. 3 Medium to Large Carrots- peeled, rinsed and sliced into 1/4" pieces

  8. 1/2 Onion - Diced into 1/2" pieces

  9. 4 or 5 Garlic Cloves - Minced

  10. 4 cups of Egg Noodles - Medium

Instructions

  1. Pour the chicken broth and water into a large stock pot and turn on medium-high heat. (I just refill 1 of the broth containers with water 2 times)

  2. Add sliced carrots, celery, onions and minced garlic to the chicken broth.

  3. Bring to a boil for 15 minutes.

  4. Add the uncooked noodles to the boiling broth.

  5. Let boil for 10 minutes or until the noodles are tender.

  6. While the noodles are cooking, shred the rotisserie chicken off the bone.

  7. Add shredded chicken to the stock pot once noodles are cooked. Then, let simmer for 15 to 20 minutes.

  8. Add salt and pepper to taste.

  9. Top with fresh parsley (optional)


If you don't have egg noodles, broken linguine or fettuccini will do in a pinch.


Cover and **Refrigerate for up to 7 days.

or **Freeze up to 6 months.
