Try these Low Carb Bean Burritos. They will hit the spot and leave you craving more. That's ok. Go back for seconds because these are low carb! Plus, with fresh pico de gallo and guacamole, it's a nice balance.
When I don't have time to make fresh pico de gallo or guacamole, I'll use store bought items. Pico de gallo can be substituted with a good salsa.
Low Carb Bean Burritos with Guacamole & Pico de Gallo
Ingredients
5 *Low Carb* Tortillas
8 oz of Refried Beans
2 cups of Shredded Cheddar Cheese
1 cup of Pico de Gallo - or more
1 cup of Guacamole - or more
Instructions
Pre heat your oven to 325 degrees
Lay the tortilla flat and add a layer of Refried Beans, Salsa and a layer of Guacamole and cheese
Roll once and fold in each corner and roll until the end (for each tortilla)
Lay filled tortillas on a baking sheet.
Top with remaining salsa, guacamole and cheese
Bake at 325 for 15 to 20 minutes
