One-Pot Lemon Herb Chicken and Rice - Serves 4
Ingredients:
4 chicken breasts
1 cup white rice
2 cups chicken broth
1 lemon (juiced and zested)
2 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and pepper to taste
2 tablespoons olive oil
Fresh parsley for garnish
Instructions:
In a large skillet with lid , heat olive oil over medium heat.
Add chicken sprinkles with salt, pepper, thyme, and rosemary to the skillet and cook until browned on all sides.(1-2 minutes on each side). Set aside.
Stir in minced garlic and cook for an additional minute.
Add rice, chicken broth, lemon juice, and zest to the skillet. Place browned chicken on top on the rice mixture and bring to a boil.
Reduce heat, cover, and simmer for about 20 minutes or until rice is cooked and liquid is absorbed.
Garnish with fresh parsley before serving.
