One-Pot Lemon Herb Chicken and Rice - Serves 4

Ingredients:

  • 4 chicken breasts

  • 1 cup white rice

  • 2 cups chicken broth

  • 1 lemon (juiced and zested)

  • 2 cloves garlic, minced

  • 1 teaspoon dried thyme

  • 1 teaspoon dried rosemary

  • Salt and pepper to taste

  • 2 tablespoons olive oil

  • Fresh parsley for garnish


Instructions:

  • In a large skillet with lid , heat olive oil over medium heat.

  • Add chicken sprinkles with salt, pepper, thyme, and rosemary to the skillet and cook until browned on all sides.(1-2 minutes on each side). Set aside.

  • Stir in minced garlic and cook for an additional minute.

  • Add rice, chicken broth, lemon juice, and zest to the skillet. Place browned chicken on top on the rice mixture and bring to a boil.

  • Reduce heat, cover, and simmer for about 20 minutes or until rice is cooked and liquid is absorbed.

  • Garnish with fresh parsley before serving.
