American style Potato Salad served cold and made with mayonnaise. Wholesome and easy to make. Perfect side dish for any Summertime get together. This side is very versatile. We see it served during holidays too!
Potato salad is a side dish you can always count on pleasing a crowd. One should always have a go to Potato Salad recipe. Here's mine.
Potato Salad
Ingredients
6 Medium Sized Potatoes
2 Ribs of Celery, chopped
1/2 can Sweet Peas, drained and rinsed
4-5 Baby Dill Pickles, chopped
2 tablespoons Salt
Pepper to taste
2 cups Mayonnaise
Celery Seed (optional)
For Garnish - Chopped Green Onions / Scallions
Instructions
Peel the potatoes and rinse. Cut into 1/2" x x1/2" pieces and boil in a medium pot for approximately 8 - 10 minutes. Drain and set aside to cool.
In a medium to large mixing bowl add the mayonnaise, celery, pickles, salt and pepper (optional).
Add the potatoes to the mixing bowl when it stops steaming. Fold the mayonnaise mixture as to not mash the potatoes.
Add in the sweet peas and gently fold them.
Add salt / pepper to taste if you like more. Sprinkle celery seed on top (optional). The top with chopped green onions / scallions. Let cool in the refrigerator.
Serve cold.
